Good food inspires writing.

This I know to be true, I’m all set and ready to start my next novel, good for my brain but very bad for my weight if I don’t eat properly. With that in mind I have decided to give you the recipes for my favourite comfort food that is amazingly also good for me and helps me cut down on snacking.

Creamy Cauliflower & Carrot Soup

Serves 3-4 (30 ins to ready)

1 onion – chopped

3 large carrots – chopped

1/2 head cauliflower – chopped

950ml chicken/veg stock

100grams Cheddar

1/4 tsp Nutmeg

1/2 tsp Hot Chilli Powder

splash of Worcestershire Sauce

knob butter

Black Pepper to taste

  1.  Melt the butter in a pan add onion, carrots & cauliflower over a low heat for 5 mins
  2. Add chicken stock, bring to the boil then simmer for 15-20 mins.
  3. Remove from heat, add nutmeg, chilli, black pepper and blitz to as smooth as you like. Gradually add cheddar until melted.
  4. Serve. ( I have fresh granary bread with mine)

Now I can get back to my writing without having to worry about snacking all through the evening.
